About Pop C’s Louisiana Kitchen
Calvin “Pop C” Colin III was born in New Orleans, LA to Mr. Calvin Jr. & Mrs. Debbie. He is the eldest of four siblings. Calvin’s desire was to be a professional athlete; however, God had other plans. Calvin joined the U.S. Army where he served nearly 30 years prior to retirement. While eating at a local establishment in Florida, Calvin overheard a conversation. A statement was made that bothered him. A patron stated that this is the best Louisiana food in Florida.
Being who he is, Calvin pardoned an interruption to share that the food was not authentic and this individual certainly has never had Louisiana food. In a few other conversations with colleagues, this statement was made regarding this same restaurant. Calvin argued the fact that the food was not authentic to the culture of Louisiana and decided he would prove a point. He cooked seafood gumbo, jambalaya, red beans & rice, and a few other dishes. He announced at work that the food was there in his office and invited all to eat. Seeing everyone go back for seconds and thirds and listening to all the comments, some comments became a theme – “Now, this is Louisiana cooking.” Another said, “Man, if you don’t start your own restaurant…” Calvin held those words closely.
Anytime new Soldiers or Civilians joined the team and asked where to find Cajun/Creole food, everyone pointed them to Calvin. A year prior to retirement, Calvin stepped out on faith. He used his retirement to purchase his first food trailer. Staying true to who he is at his core, Calvin promised to remain authentic and hold on to the rich culture and traditions of Louisiana heritage: faith, family, food, and fun. He opened Pop C’s Louisiana Kitchen in October 2022. Calvin is called Pop C by his granddaughter. Pop C’s opened his second location in April 2025 with the desire to one day have two food trailers and one mom-and-pop restaurant in operation simultaneously. Stop by, grab a bite to eat, and say hi. He loves the fellowship and meeting new people, particularly seeing the smiles on faces and the enjoyment of eating the finest Louisiana food outside of Louisiana!

Pop C’s food truck came to MLK Park in Winter Haven, and the food was incredible. I worried everything would be too spicy, but they assured me we would like the Cajun Chicken Pasta. They were right. I returned and asked when they were leaving because we needed another order to take home. (We also got a Po Boy and rice & beans). Once we got the food home, it never left the kitchen. We just stood there and ate it all, without even trying to sit at the table. I hope that they return to Polk County soon.

I can't say enough enough about their chicken strips. They are the best I've ever had, and that includes any restaurants in many states. First of all, they are always fresh and piping hot. Actually too hot to eat at first! They are always completely cooked through, yet retain an incredible juiciness. And the taste, they just can't be beat. It's just the right selection of spices to give it a great flavor, without being spicy hot. And also, these are not salty. They are perfectly balanced. But another thing that needs note is the incredible friendliness and service of the folks who work here. They are the most helpful crew, and always friendly and fast. This food truck is out in front of Amazon, and I was one of several people that showed up as they were closing, because I didn't know that Amazon had changed their lunch hours. And the crew that was working stayed open for us and was happy to have us. What great people. You don't have to work at Amazon to enjoy this place, just make sure you come during Amazon's lunch! They deserve 10 stars. Really incredible food.

Got some orders of beignets and a large snow cone. The beignets were fresh, warm, and delicious. The snow cone was super good too (tiger’s blood). The kids liked it. Perfect for the hot weather. The gentleman was super cool and kind. Highly recommend. They have gumbo 👀 gonna need to try that.

I usually go to dog house for fish sandwich . However im definitely happy I decided to switch it up!Pop C’s cat fish is extremely flavorful seasoned it well and they fried it to perfection it wasnt really wet and that were most people miss but when you from lousiana you KNOW how to fix seafood and this place understood the assignment. The only thing id change is wait time because customer service was great. Thank you

What a great food truck! Super friendly and the food is so good! We had the chicken and the gumbo. Also had a cotton candy snow ball! Yummy! We will be back!
